This pie is ABSOLUTELY the best meat pie I have ever had in my life! This recipe was found whilst I was on the train and found that somebody left it on the seat. Thank you to who ever left it on the train! Sometimes, I just make the stew and serve with mashed spuds.

  • 675g (1 1/2 lb) diced braising steak
  • sea salt and freshly ground pepper
  • 2 heaped teaspoons of plain flour
  • olive oil
  • 1 onion, peeled and diced
  • 1 carrot, peeled and diced
  • 4 sticks of celery, diced
  • 1 small handful of fresh herbs (rosemary, thyme, bay leaf)
  • 1 (500ml) bottle of Guinness®
  • 2 (400g) tins of chopped tomatoes
  • 1 (500g) packet of puff pastry
  • 1 egg, beaten

  1. Season your beef well with the salt and pepper to taste, sprinkle with flour and toss around until coated.
  2. Heat 2 to 3 glugs of olive oil in a large casserole type pot and fry your meat until well browned.
  3. Add the onion and fry for one more minute, then add celery, carrots and herbs. Cook for a further 5 minutes then pour in your Guinness®.
  4. Add the tinned tomatoes; bring to the boil. Stir well, then simmer for 2 hours or until the meat is tender.
  5. The sauce should be nice and thick with an intensley tasty flavour. Season with salt and pepper.
  6. To make the pies, preheat the oven to 190 degrees/gas mark 5.
  7. Put the meat filling into a large baking dish or 6 ramekins.
  8. Roll out pastry and place over your baking dish or ramekins, making sure it is slightly bigger than the circumference of the dish/dishes.
  9. Brush the rims of your dish/dishes with beaten egg, then place the pastry on top of the dish, squashing the extra pastry on the outside of the dish to secure. Lightly score the top of the pastry in a criss-cross fashion and brush with more egg.
  10. Place on a baking tray (to catch the drips) and bake in the middle of the preheated oven for 45 minutes until golden and bubbling.
  11. Let it cool down for 10 minutes before you dig in.

Make ahead...

This pie freezes well - simply assemble the pie and freeze before baking. Once you're ready to bake, simply throw it in the oven straight from the freezer.

This is a nice recipe but I think it may be better with a beef stock instead of tinned tomatoes. It's a personal preference but I'd prefer a more rich, beefy flavour than a tangy, tomatoey flavour. Also, I think next time, I'll cook the beef VERY slowly in a low oven as it's tricky not to overheat it when cooking over the hob.-29 Aug 2010

Something else.Can I suggest you make a simple shortcrust pastry and use it as a base in the baking tin or dish, the combination of the shortcrust and the puff pastry goes great with any pie.-09 Aug 2008

Transfer meat and vegetables to a 1-quart baking dish.

Whisk beer, brown gravy mix, 1/2 teaspoon garlic powder, thyme, and black pepper together in a saucepan over medium heat. Bring to a simmer, reduce heat to low, and cook, whisking constantly, until sauce has thickened, about 5 minutes. Pour sauce over meat and vegetables.

1 stick unsalted butter (cut into 1tbs pieces)

Combine flour, and butter in a food processor and pulse 5-10 times until combined.

Add salt and ice water and pulse 3-4 more times until it starts to come together.

Dump contents on a work surface and kneed until it forms a ball.

wrap in plastic wrap and refrigerate for 30 minutes.

remove from fridge onto a floured work surface and roll until 1/8 of an inch thick.

chop steak into 1/2 in pieces and place into a mixing bowl.

season with salt and pepper and add flour. Toss to coat.

heat a pan over high heat and sear the steak a few minutes on each side until browned. remove to a plate.

chop onions, garlic, carrots and chile and add to hot pan. saute for 2-3 minutes.

add beef broth and scrape the bottom of the pan with a wooden spoon.

add beer, ketchup, worchestershire, thyme, and brown sugar.

simmer for 2 hours uncovered until steak is tender and sauce is reduced by half.

place filling in pie pan and top with pie crust and crimp with fingers or a fork.


Jacob’s Ladder and Guinness cottage pie

Rob Kirby, of Lexington Catering, London, suggests you get hold of short ribs for this recipe. However, good-quality stewing steak will also work. This is a big recipe so allow yourself plenty of time – the result will be worth the effort. Hold back a couple of short rib bones or ask your butcher for a couple of fore rib bones for a fun garnish.

5 tbsp vegetable oil
2kg Irish beef short ribs or 1kg best Irish stewing steak
4 large carrots 2 roughly chopped and 2 cut into 1cm cubes
4 onions 2 chopped and 2 thinly sliced
1 leek, sliced
½ bunch of thyme
1 tsp peppercorns
1 head of garlic, halved
2 bay leaves
440ml Guinness
2 litres beef stock
50ml Worcestershire sauce
1 tbsp brown sugar
Sea salt and freshly ground black pepper

4 large Maris Piper potatoes, peeled and chopped
50g butter
100ml milk
50ml double cream
100g mature Irish Cheddar cheese, grated
Sea salt

Preheat the oven to 150°C/Gas mark 2.
Pour 2 tablespoons of vegetable oil onto a large roasting tray and place over a high heat until the oil is smoking. Generously season the ribs with salt and pepper and sear and colour until golden brown, remove from the roasting tray and drain in a colander (cook these in batches to avoid crowding the pan).
Heat a further 2 tablespoons of oil in the same roasting tray, then add the roughly chopped carrots and onions, leeks, thyme, peppercorns, garlic and bay leaves. Cook for 10–12 minutes until the veg is nicely soft and browned.
Pour the Guinness into the pan and leave to reduce by half (around 5 minutes), then return the ribs to the tray and barely cover with beef stock and Worcestershire sauce. Cover with foil and place in the oven for around 4½ hours, turning every hour until the meat is tender and is falling off the bone.
Carefully remove all the meat and bones from the pan and set to one side. Pass the cooking liquid through a fine sieve and pour into a clean pan. Place on a medium heat and bring to the boil. Skim and reduce by half (around 20 minutes this should give you around 750ml).
Allow the ribs to cool, then pick off all the meat, shred and chop finely into a large bowl.
Place a saucepan over a medium heat, add a tablespoon of vegetable oil and then the sliced onions, sprinkle over a tablespoon of brown sugar and caramelise for 10–15 minutes. Add in the cubed carrots and cook for a further 8 minutes until slightly softened, stirring occasionally.
Add the caramelised onions and carrots to the bowl of meat, then combine with the reduced cooking liquor. Season, then place the mixture into either individual dishes or one large dish. Leave to one side and allow to cool.
Increase the oven temperature to 190°C/Gas mark 5.
Place the chopped potatoes in a large saucepan, cover with cold water, season with salt and bring to the boil. Cook until tender, then drain thoroughly in a colander. Place back in the saucepan over a low heat, add the butter, milk and double cream and season with salt, then mash together. Place in a piping bag and pipe on top of the cottage pies (alternatively, just spoon on carefully and fluff up with a fork). Sprinkle the grated cheese over the top. Place in the oven and cook for 15–20 minutes until golden brown.
Garnish with spare rib bones (optional).
