Supreme Pie

If you have fresh spinach, wash and scald in salted water, then drain and chop. If you have frozen, defrost it in a strainer, to drain the water.

Cut the green onion into rounds, chop the dill, then mix with the spinach, grated cheese, a whole egg and the egg whites from the second one. Mix well and season with ground pepper and salt to taste.

Place a sheet of pie in the tray lined with baking paper, spread the filling over it. The other sheet of pie is cut into strips and a grid is formed on top.

Grease with the remaining yolk and sprinkle with sesame seeds, then bake for 35-40 minutes on medium heat.

It is better cut cold.

Ingredients for the filling

1. Preheat the oven to 220 °. In a medium bowl, mix the flour with the salt and oil with a fork until smooth.

Apple pie. 3 recipes that turn you into the most skilled chef

The apple pie is the queen of pies not only because it is delicious, but also because it is easy to prepare. The recipe is simple and seems centuries old. Not only does it "seem", but it really is. Because the pie, in general, disregarding the filling, has a history of thousands of years.

The first mentions appeared around 9,500 BC, when the Egyptians cooked the first pie crust, called "galettes", filled with rye, barley or oats and smeared with honey. In the Roman Empire it became the "placenta" or "libum" and was taken by Roman soldiers throughout Europe to the British Isles. Queen Elizabeth I of England (September 7, 1533 - March 24, 1603, crowned November 17, 1558), says the legend, would have cooked the first apple pie "Made in England". Meat pie

I recently showed you on Facebook a pie with eggs and onions. I really liked the idea, so I decided to repeat it, this time with meat. I also made changes to the dough, and you can see what came out below.

  • filling:
  • 300 g minced meat (I put pork mix with beef)
  • 2 tablespoons olive oil
  • 1 or
  • salt, ground pepper, onion powder
  • it took:
  • 5 eggs
  • 200 g fat fermented cream (20-25% fat)
  • 80 g butter or lard, melted
  • 30 g Szafi Reform fiber flour (or 35 g if the eggs are large)
  • 1 teaspoon baking powder
  • ½ teaspoon of salt

Fry the minced meat in olive oil for 5-7 minutes. Season to taste and set aside. When it has cooled, add the egg.

For the dough, beat the eggs with the cream, salt and melted fat. Incorporate the flour with the baking powder. Leave the dough to stand for 10 minutes. The consistency should be quite liquid, but keep a little shape after falling off the spoon. If it has thickened too much, dissolve with a little mineral water.

In a form greased with butter (mine has the dimensions of 20 * 20 cm, I think it went a little smaller) pour half the amount of dough. Spread the filling evenly on top, then pour the rest of the dough, spreading with a spoon to cover the filling. Place the tray in the preheated oven at 170 degrees C for about 45 minutes or until the surface catches and browns. The first half hour of baking I recommend to cover the form with aluminum foil or a lid.

When the pie is baked, take it out of the oven and leave it to cool. Cut and serve hot.

We gather in a bowl the flour with the yeast, the eggs, the warm milk and the salt. Then add the oil and mix until incorporated. Pay attention! The dough should be sticky.

For the filling, lightly sauté the onion in 2 tablespoons of olive oil, then add the sliced ​​mushrooms and finely chopped pepper. We keep everything on the fire until the water left by the mushrooms decreases. Sprinkle with salt and pepper to taste.

In order not to stick the contents of the tray, we recommend that you place baking paper on the tray, and then put breadcrumbs. Then put half of the dough, sprinkle breadcrumbs again and place the filling on all the dough in the pan.

At the next stage, place the sliced ​​cheese on top of the pie in the pan. And at the last stage we add the other half of the remaining dough and sprinkle the poppy for decoration. Leave the pie to rise for 30-40 minutes and bake it in the preheated oven for approx. 25-30 min. over medium heat until it passes the toothpick test.

Whether I have periods when I feel the need to eat only herbs (sometimes legal), or I sometimes fool around with diets and light & healthy shit, deep in my soul will remain a simple girl who, although she has several generations wearing shoes, still it comes from the peasants. Or from the Jews? I'm still not sure.
So I would eat (almost) anytime and anyway, any food with heavy and rich sauce, hot and spicy, next to which you only need a piece of homemade black bread. Whether it's a butcher's stew, a pot, a curry or a paprika, I'm in it. Literally :).

So the 8th Round of the Earth reaches today our neighbors who had Mihai Corvin as king, that is, in Hungary, where there is no greater happiness on the Buddha than paprika and goulash soup.

And why would I have deprived myself of such great happiness, especially in this frost? Okay, before this proof of supreme love that I showed myself, I masochistically tested my limits with a trip to Obor Square, where I bought beef: a few bones with marrow, a piece of pulp beef (500-600 grams) and two antricoate (500 grams).

Except for the anthrax, I boiled the rest of the meat, diced, and the bones for about two hours and a bit. Bones that, obviously, are for taste (but also that marrow put on toast is the death of the world and of the arteries). When the liquid has dropped, I added a can of tomato puree (mashed potatoes - but if you have juice made by my grandmother, it's even better), about 2-3 tablespoons of tomato paste, two teaspoons of hot pepper paste (from what you feel in both directions) and I couldn't help but put on some harissa, to know a job (a really big job, I could say). Of course, hot and sweet paprika, but also some smoked paprika that I took from Istanbul, sea salt and a spoonful of sugar.
Now I let everything simmer for another 20 minutes, stirring occasionally in the pot. I don't really use flour in sauces (although this happens quite often in Hungary / Transylvania). But this paprika is not even needed, because the sauce decreases and thickens naturally.

But now, how many huts, so many paprika. I could have made some flour dumplings to bathe in Hungarian in this Berceni sauce, but I had just "grown" a homemade bread with bran overnight and it would have been a shame to have too long a life.
