Octopus salad is a tasty appetizer typical of Mediterranean cuisine, widespread especially in the regions of Southern Italy, it can be used as an appetizer or as a second dish if we add potatoes. It is a dish that I prepare mainly in summer, accompanied by a good glass of ice-cream white wine, and it manages to attract the attention of Ivano too, who is always a little reluctant with fish-based dishes. L'octopus salad it is a very easy dish to make, nevertheless the quality of the fish and the cooking will determine the excellent result of the dish. I tell you how we make octopus salads in my house, of course, the persistent smell will "plague" the whole house, but it's worth it;)
How to make octopus salad
Put lightly salted water in a large pot and flavor it with wine, garlic and lemon juice and bring to a boil.
Beat the octopus, clean it and wash it several times under running water (Read the guide on how to clean the octopus).
At a high boil, immerse the octopus and cook for about an hour or in any case until the octopus has become very tender.
Prepare a marinade with parsley, garlic, lemon juice, pepper, salt and oil and let it rest for at least 1 hour.
Once the octopus is cooked, let it cool and cut it into small pieces.
Season with the previously prepared marinade, stir and, if necessary, season with salt.
Let it cool well and serve the octopus salad on the table.
