Once golden, lift the aubergines with a slotted spoon and place them on absorbent paper to remove excess grease. Cut the mozzarella into cubes.
Prepare a sauce with the puree flavored with extra virgin olive oil, basil and salt and let it cook for half an hour.
Cook the pasta and drain it al dente.Put the pasta in a bowl and season with a few ladles of sauce, half of the grated Parmesan, 3/4 of diced fiordilatte, 3/4 of the aubergines, basil and pepper.
In a baking dish, put a ladle of sauce on the bottom, pour the pasta,
Cover the Sicilian pasta with the remaining aubergines, the mozzarella, the sauce and sprinkle with the remaining Parmesan.
Put the Sicilian pasta in the oven and cook at 200 ° for about 30 minutes. Let the Sicilian baked pasta cool before cutting it into slices and serving.
