The flamenco eggs, or the huevos a la flamenca, are a second dish that I had the opportunity to taste and appreciate during my trip to Andalusia a few months ago. It is a recipe born in Seville and brings with it the colors and flavors of this magnificent land. In this preparation the eggs are cooked in an earthenware pan together with peppers, tomato sauce, peas, ham, salami (chorizo) and many other ingredients of your choice.
Since my friend Domenico, who lives in Spain, brought me jamon and a book of tapas, I couldn't help but get to work and start right from flamenco eggs he always talks to me about. Eggs made in this way are very substantial and can also become a complete and nutritious dish;)


How to make flamenco eggs

Clean and cut the tomatoes and pepper into chunks.
In a pan, fry the garlic and onion in the oil, then add tomatoes, pepper, parsley, salt and pepper.
Mix the ingredients and cook for about 15 minutes.

Then transfer to an earthenware pot and place the jamón on top.
Now boil the peas and, when they are ready, lift them and put them on the ham.

Open the eggs directly in the crock, without breaking the yolks, and cook at 200 ° C for 10 minutes.

Your flamenco eggs are ready to be served.
