Yogurt cheesecakes are my latest experiment on the topic of cheesecakes: I made small cakes, I covered them all with a strawberry jelly and I served a fresh and light dessert. Method

How to make yogurt cheesecake

chop the biscuits then put them in a bowl and add the melted butter and mix it with a spoon.

Then take a muffin mold and fill it with paper cups: distribute a spoonful of the mixture obtained in each cup and flatten to make a smooth base. Refrigerate to harden for half an hour.

Meanwhile, prepare the cream:
put the isinglass to soften in a bowl of cold water for 10 minutes
Separately, work the Philadelphia cheese with the yogurt and the icing sugar

In a saucepan, heat 1 tablespoon of vanilla essence, squeeze the isinglass and let it melt then add it to the cream cheese.

Put the mixture obtained on the biscuit bases, then put the mini cheesecakes in the fridge to harden for 2 hours.

Now prepare the strawberry jelly: first put the isinglass to soak in plenty of cold water;
Wash the strawberries, remove the stalk and put them in a saucepan with the sugar

Cook for 5/10 minutes then blend everything until you get a puree.

Squeeze the isinglass and add it to the still warm strawberry puree and mix.

Once cooled, spread the strawberry jelly on the mini cheesecakes

Refrigerate for another hour.
Then carefully remove the mini cheesecakes from the paper cups and serve
