The after eight roll is a fresh chocolate dessert, easy to make and beautiful to look at. It is prepared with a soft base of cocoa biscuit dough to be filled later with a mascarpone cream, icing sugar, mint syrup and chocolate chips. To complete it all there is an irresistible cascade of dark chocolate on the surface, just to tempt all those who would have liked to give up tasting the dessert. How to make the after eight roll
In a large bowl, start whipping the eggs until they are swollen and frothy.
Then add the sugar, then the flour and the yeast.
Incorporate the sifted cocoa while continuing to mix.
Move everything inside a dripping pan lined with parchment paper and level the surface.
Bake the cocoa biscuit dough at 180 ° C in a preheated oven for 8-10 minutes, then remove from the oven and let it cool.
Cover with more parchment paper, turn over and gently remove the one used in cooking.
Roll up and let cool.
Meanwhile, prepare the cream by combining mascarpone and icing sugar.
Add the mint syrup and mix.
Finally, add the chocolate chips.
Now take the roll back, open it and fill it with the cream.
Roll up again and refrigerate for an hour.
After this time, melt the chocolate and use it for the topping.
