While this is a classic Italian, and more specifically Southern Italian, way of celebrating Christmas Eve, its broad appeal is undeniable. What could be better than a meal composed of seven small plates of perfectly prepared fish dishes?

Typically, the dishes include some fried seafood, some marinated seafood, some braised or baked stuffed seafood, and a pasta course. With such a diversity of dishes, it can be a challenge to pair wines with this feast, but the solution is simple: stick with a Southern Italian white. In my opinion, fiano di avellino is the best white of Southern Italy, so why look elsewhere? With enough acidity to balance out the marinated and fried dishes, fiano also brings a lovely balance of minerality and fruit to the table, weaving its way through all the complex flavors of a classic Feast of Seven Fishes!

You might notice that the wines I am recommending are not the current releases for each producer. I prefer fiano with a year or three of age as I find that the wines really open up and become more complex over this modest period of time.

Floral and peachy on the noise, this gains complexity with air to reveal a light almond milk note and lovely hints of a mineral base. In the mouth, one finds a vibrant, medium-bodied white wine that delivers layers of peach, melon, and tart apple flavors wrapped in mineral and almond notes. A really lovely and complex example of fiano that finishes with a salty, mineral twang. This is delicious and shows off the freshness of youth coupled with subtle, evolving complexity. 92pts

Quite earthy on the nose, this shows off woodsy aromas with rather high-toned citrus accent notes. On the palate, this is fairly rich with a classic nutty, earthy, and smoked almond set of flavors that is well balanced with citrus fruits. It's a taut wine and one that may surprise people looking for more roundness and fruit, but this is the essence of the earth. A healthy spritz of lemon juice brightens the fairly long finish. The Origin of the Feast of the Seven Fishes

Every year in the U.S., many people celebrate the Feast of the Seven Fishes on Christmas Eve. Although it is unclear when the dinner became so popular, this celebration is considered one of the most Italian traditions. Typically, the family gathers around a feast of seven different seafood dishes or one or two different types of fish prepared in seven different ways.

Despite its popularity among Americans, many Italians do not even know about the tradition — or its origin. Surprised? The answer can be found in the biodiversity of Italy: the country boasts so many differences between the north and south. Each of the 20 regions has a different culinary tradition for the cena della Vigilia, or Christmas Eve dinner. For example, families in Piemonte celebrate with agnolotti, fresh pasta filled with meat in Roma, the tradition calls for minestra di pesce, fish-based soup and lastly, in Sardegna, there’s no Christmas Eve dinner without malloreddus, small semolina gnocchi usually served in a sauce with tuna and fresh cherry tomatoes. Of course, for any Italian family, it wouldn't be a Christmas feast without panettone and pandoro, the traditional fluffy cakes that adorn every table and are gifted with wishes of love and prosperity, and classic holiday desserts like torrone, hazelnut-studded chocolates, panforte, and beyond.

The ancient tradition of eating fish on Christmas Eve dates from the Roman Catholic custom of abstinence from meat and dairy products on the eve of certain holidays, including Christmas. The number seven is rooted back in ancient times and it can be connected to multiple Catholic symbols: in fact, the seven seems repeated more than 700 times in the Bible. Also, according to the Roman Catholic Church, seven are the sacraments, the days of the Creation, as well as the deadly sins. Hence seven courses!

Flash forward to the early 1900s, when the official "Feast of the Seven Fishes" first emerged. Italian-American families rekindled the Old Country's Christmas Eve tradition by preparing a seven-course seafood meal (hence the name of the newly found tradition) that both made them feel close to their homes, while celebrating the sea, a major connection in Italy. Today, it's considered one of the oldest Italian traditions — but we give America credit for that!

Stuffed Calamari

Serves 4
(Note: calamari is a slippery fish. You may need an extra pair of hands to make this recipe happen.)

Ingredients

4 whole calamari
2 Tbsp finely chopped onion
1/4 cup butter
1 clove garlic, finely minced
1/2 cup breadcrumbs
3 Tbsp grated parmigiano cheese
1/2 pound ricotta
1 hard-boiled egg
1/2 cup olive oil
1 cup tomato sauce

Directions

Clean squid and finely chop tentacles and set aside.

Sauté onions in the butter over medium heat. When onions begin to soften, add finely minced garlic and cook until onions are translucent. Let cool.

Mix the breadcrumbs, cheeses, and chopped tentacles together. Add cooled onion/garlic combination. Break up egg with a fork and mix lightly into breadcrumb mixture.

Spoon the mixture into the calamari until it is about halfway full. (The stuffing will swell as it cooks and will fill the calamari completely.) Close the open end with a toothpick.

Add tomato sauce to top of calamari. Drizzle olive oil over it. Bake at 400°F for 15 minutes, then decrease the heat to 350°F for 30 minutes.


How to Cook the Feast of the Seven Fishes for Christmas Eve Dinner

There are no hard-and-fast rules about the preparation of the Feast of the Seven Fishes . But there is plenty of debate over its origin and how to celebrate this Italian and Italian-American tradition. What fish should be included and how they should be prepared can vary. Some people cook seven courses some choose to make 12 (in deference to the 12 apostles). Some just put a bunch of seafood in a stew and call it good. Many families keep their own traditions, but everyone who celebrates can agree: Seafood should be prepared and consumed on Christmas Eve. Preferably with wine.

Says Carla Lalli Music , BA food director, "What counts as a must-have for this night at your house, would be unthinkable at someone else’s. For example, we never serve lobster, but for a lot of italians, it’s not Christmas Eve without lobster fra diavolo ( get the recipe here! ) or stuffed tails. That said, once a menu is set and your relatives are attached to it, you can probably never change anything—or else the people revolt!"

If you're planning on cooking the feast for the first time, there are a few guidelines to keep in mind. We spoke with Lauren Fougere , sous chef at New York City's Hearth , where the restaurant serves an annual seafood feast. Fougere talked us through a typical feast at Hearth, and we gleaned out some tips for creating your own menu. Hearth serves five fish courses with one palate cleansing dish and a dessert. We based this menu off of that model, but feel free to riff if you want more fish and less cannoli.

But first! Before you read any further, order your fish the weekend before Christmas Eve. It's a big day for fish markets and fishmongers, and the seafood moves fast. We repeat: Do not show up to the store on the morning of Christmas Eve and expect to acquire every clam, shrimp, whole lobster, and salmon fillet you've planned on. Order ahead . Now, onto the business at hand:

1. First Course: Something Snacky

You've got six more courses to go, so it's in your and your guests' best interest to pace yourselves. Don't go too heavy or rich. Hearth serves whipped bacalao, or salt cod, with grilled bread. You can make your own, says Fougere, by burying cod in salt for nine days. But if time is of the essence, you can purchase bacalao at many specialty stores—most Whole Foods also sell it. Or, you can forgo the cod all together and make these easy salmon rillette or this lemony smoked trout dip . Whatever creamy dip you choose to serve, crunchy toasted bread drizzled with quality olive oil is a must. Crisp, lip-smacking Vermentino would be an ideal pairing, according to Fougere.

2. Second Course: A Bracing, Light Salad

Now we're cooking. A cold seafood salad for the second course is an ideal way to move into the more substantial courses. Hearth serves grilled squid with greens, and we think that's just grand. This recipe for Pan-Seared Squid and Lemony Aioli will do the trick. For the wine? Stay the course with something light, bright, or even bubbly.

3. Third Course: Something Hearty, Grilled, Seared, and 'Meaty'

This is your chance to wow ɾm with a stunner of a plate. Choose center-cut fillets of fish like cod, salmon, or bass, or else go with dramatic presentation: Hearth serves grilled head-on prawns over a smoky soup. To really play up the flavors, make it a composed dish with vegetables, beans, or legumes. The prawns at Hearth are accompanied with smoked chickpeas and caramelized onions. These Grilled Shrimp with Chile, Cilantro, and Lime are prepared with the shells on for maximum crunch. A Riesling with crackling acidity can do wonders for a gently spiced dish—it's one of Hearth's picks for this course.

4. Fourth Course: Pasta!

"We serve a really traditional spaghetti with clams ," says Fougere. "This is an Italian menu, after all." Whatever seafood you pair with your noodles, build flavor with a pinch (or more) of pepper. Hearth uses peperoncino, and coaxes out maximum flavor by toasting it in a hot pan with olive oil and garlic. The heat will build slowly, balancing out the richness of the pasta and the salinity of the seafood. A hearty white with a good, viscous body, like Gewürztraminer, is great here.

5. Fifth Course: A Hearty Seafood Stew

"Even the 'heaviest' course is pretty light," explains Fougere. That's the virtue of an all-seafood menu. Hearth is serving cazciuco, a tomato-based cioppino-like stew. The sky—err, the sea—is the limit when it comes to what fish is allowed in the stew, but Fougere mentions that octopus and the usual bivalves (clams, mussels) are especially tasty. She's also fond of bass, cod, and squid. To create your own stew, use a flavorful broth or fish stock. This cioppino recipe is also flavored with clam juice and white wine. Finish with fresh herbs to lighten and brighten the dish. Want to go red with your wine? Keep it light and low acidity—Pinot Noir is a nice choice.

6. Sixth Course: The Palate Cleanser

Palate cleansers aren't just for fancy tasting menus. Hearth serves a bracing, citrusy course to separate the savory and sweet. This year, its making a grapefruit sorbetto. We think this limoncello gelato would be perfect. (Psst—if you're planning on making your own gelato, do so well in advance, so it has time to firm up.)


Clam Dip

Creamy clam dip is always a hit at holiday parties and makes a great presentation on your sideboard or buffet table. Make it easily with canned minced clams and cream cheese seasoned with garlic, Worcestershire, and a dash of tobacco. You can use the included recipe for homemade pita chips or get some at the supermarket.


Appetizers

Fritto Misto (Fried Seafood and Vegetables) by Anthony Scotto and Marion Scotto and Elaina Scotto

Who doesn't love crispy fried food? This mix of fried seafood and vegetables is a classic Italian dish that's perfect for Feast of the Seven Fishes or any dinner spread.

The flavors for this dish come from traditional Roman saltimbocca: veal cutlets with sage and prosciutto. Andrew Carmellini replaced the prosciutto with pancetta and the veal with prawns or jumbo shrimp. The tender prawns balance the meatiness and crispiness of the bacon and the sage, tempered by the lemon, makes it taste incredibly fresh.

Baked Clams Oreganata by Elaina Scotto and Anthony Scotto

Beautiful baked clams are a must-have for a traditional Italian feast but are a wonderful, go-to appetizer to enjoy during any season. There are other versions of the delectable Italian recipe that can be made-ahead, but most have the same rich, lemony flavor profile.

Salmon and Avocado Tartare by Anthony Scotto and Elaina Scotto and Marion Scotto

This elegant appetizer has layers of salmon tartare, avocado puree and a crunchy shaved raw vegetable salad dressed with citrus vinaigrette. It's a great way to cut through traditionally heavier holiday fare.

Lobster, shrimp and calamari become refreshing and light when chilled in this insalata di mare (salad of the sea) — doesn't everything in Italian sounds like edible poetry?

Another chilled seafood salad worth trying includes a zesty orange vinaigrette dressing that cuts right through the warm, buttery smells wafting through the kitchen on Christmas Eve.


Celebrate the Feast of the Seven Fishes with these Italian dishes

The Feast of the Seven Fishes is a traditional Italian Christmas Eve dinner where course after course features delicious and luxurious seafood dishes. Here, Sal Scognamillo of Pasty's restaurant is sharing some of his favorites.

Linguini Frutti Di Mare
Serves 4 to 6

  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 28-ounce can plum tomatoes, with juice
  • 1/4 cup dry white wine
  • 1/2 pound cleaned calamari, cut into 1/2 -inch rings
  • 1/2 pound small shrimp, cleaned and halved
  • 16 littleneck clams, scrubbed
  • 16 mussels, cleaned
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh flat-leaf parsley
  • Salt and freshly ground black pepper, to taste
  • 1 pound linguini, cooked al dente

In a large saucepan, heat the oil over a medium flame. Add the garlic and sauté for 1 to 2 minutes, until soft and golden. Coarsely chop the tomatoes and add with their juice to the saucepan. Add the wine and the calamari and bring to a boil. Lower the heat, cover, and simmer for 25 to 28 minutes, or until calamari is tender.

Raise the heat to medium and add the shrimp, clams, and mussels to the sauce. Cook covered for about 10 minutes or until the clam and mussel shells open discard any that don’t. Stir in the basil and parsley and cook for an additional 2 minutes. Season with salt and pepper.

Place the cooked linguini in a serving bowl. Spoon the sauce and seafood over the pasta and toss to combine.

Octopus affogati

  • 2 tablespoons olive oil
  • 4 cloves garlic
  • 1 pounds of octopus (Boiled for 1 hour)
  • Salt and pepper, to taste
  • Chopped Basil
  • Patsy’s Marinara Sauce

Sauté the olive oil and garlic. Add the octopus, sauce, basil, and water. Boil and cover. Simmer for 20 minutes. Serve over linguini.

Calamari salad
Serves 4

  • 2 pounds cleaned calamari, cut into 1/2- inch rings
  • 1/3 cup olive oil
  • Juice of two lemons
  • 2 ribs celery, cut into 1/2-inch slices
  • 20 gaeta or kalamata olives, pits removed
  • 2 garlic clove, minced
  • 2 tablespoons finely minced fresh basil
  • Salt and freshly ground black pepper, to taste

Bring a large pot of water to boil and cook the calamari rings for 20 to 25 minutes or until tender. Drain and place in cold water to cool for 15 to 30 minutes. Drain and reserve.

In a large bowl, combine the oil, lemon juice, celery, olives, garlic, and basil. Add the cooled calamari rings and mix thoroughly. Season to taste with salt and pepper, and refrigerate for at least 1 hour to infuse the flavors. Serve chilled or at room temperature.

Baked calamari with low fat tartar sauce

This recipe is healthy because it is baked and does not contain any flour. It also uses low fat sour cream instead of regular mayonnaise, cutting down on half the fat.

  • 2 pounds cleaned calamari, cut into 1/2- inch rings
  • 1/3 cup olive oil
  • 1 Lemon (for wedges)
  • 2 eggs (for egg whites)
  • 1 cup of bread crumb
  • 1/2 cup low fat sour cream
  • 2 tablespoons Grey Poupon Dijon mustard
  • 2 tablespoons non-pareil capers (drained and rinsed)
  • 2 stalks of celery cut fine
  • 2 scallions (tips trimmed, chopped very fine)

Pre heat oven to 400 degrees.

Lightly coat the calamari with egg white and then bread crumb. In a large non-stick baking dish, toss with very little olive oil to coat bottom of pan.

Bake in the oven at 400 degrees for 7 or 8 minutes. Turn calamari over and bake another 3 minutes.

Low fat tartar sauce: Mix all ingredients together.

Shrimp fra diavolo
Serves 4-6

  • 1 pound capellini pasta (angel hair), cooked to package directions
  • 3 cups (24 ounces) Patsy’s Fra Diavolo sauce
  • 1/4 cup dry white wine
  • 1/2 cup water
  • 1 to 1 1/2 pounds large or extra-large shrimp, peeled and deveined

In a large saucepan, bring Patsy’s Marinara Sauce to a boil. Add wine, water and shrimp. Reduce heat, cover, and simmer for 7 minutes. Salt and pepper, to taste. Serve over pasta.

Striped bass marechiare
Serves 4 people

  • 1/4 cup of olive oil
  • 1/2 cup of water
  • 8 cloves of garlic sliced thin
  • 4 striped bass filets (8 ounces each)
  • Salt
  • Pepper
  • Fresh basil
  • 1/4 cup of dry white wine
  • 12 oz. of boiled tomatoes

In a large sauté pan that has depth to it, sauté the garlic in olive oil until it’s lightly brown. Add filets and water. Add the tomatoes in the garlic and water mix. Add white wine, salt, pepper, basil. Bring to a boil, cover, and simmer for about 8 to 10 minutes until filets are cooked through.

Clams arreganata
Serves 4

  • 24 clams washed and cleaned
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup Season bread crumbs
  • 1/4 cup of olive oil
  • 2 lemons, each cut into wedges

Shuck the clams, discard half the shells, and place the clam meat in the remaining half shells. Season with pepper.

Spoon the bread crumbs on the clams and smooth with the back of a spoon. Arrange the clams in one layer in a broiler pan and drizzle lightly with the olive oil to moisten.

Add ¼ cup of water and broil until the bread crumbs are lightly browned, about 2 to 3 minutes.

Put oven to bake- if all water is evaporated add some more and bake for 3-4 minutes. Remove and serve hot with lemon hedges.

Flounder milanese
Serves 4

  • 1/2 cup all-purpose flour
  • 3 large eggs, lightly beaten
  • 1 cup seasoned bread crumbs
  • 4 filets of flounder
  • 1 cup olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 lemon, cut into wedges

Put the flour on a large plate, the beaten eggs in a shallow bowl, and the bread crumbs on another large plate. Lightly coat the flounder, then the beaten eggs, and then the bread crumbs.

Heat the oil in a large skillet to a frying temperature of 375ºF. Fry the filets of flounder turning once, for 4 minutes, or until cooked through. Drain on paper towels. Season with salt and pepper, and serve with lemon wedges.


Feast Of The Seven Fishes


Some of the most delicious traditions come from Italian homes during the holidays. Although Italians always seem to take an interest in food particularly during the numerous holidays throughout the year, at Christmas, food always seems to become a priority. Apart from the many religious traditions, this is the time each year when celebration foods are prepared and families gather together to enjoy this special season. One of the most famous traditions followed each Christmas is the one for La Vigilia, or the Feast Of Seven Fishes which is celebrated on Christmas Eve. This year we are in our new home close to family so I am very excited to be able to host my own Feast of The Seven Fishes this Christmas Eve. I am going to be working on a few new seafood recipes to use in my menu over the next few weeks and I will share them with you soon!

The tradition of eating seafood on Christmas Eve dates from the medieval Catholic tradition of abstinence, or in this case, refraining from the consumption of meat or milk products on Fridays and specific holy days. As no meat or butter could be used, observant Catholics would instead eat fish, often fried in olive oil. The type of seafood prepared for this feast is similar for most families as there are always seven combinations of anchovies, sardines, dried salt cod, smelts, eels, squid, octopus, shrimp, mussels, oysters, and clams. Spaghetti with Sardines is a very typical pasta served for this meal, while a number of other seafood selections are often combined in a seafood salad eaten as a first course, or appetizer.

While researching the background of this tradition I was surprised to find out that it is not always simply seven seafood dishes prepared. Some feel there must be seven different types of seafood served, while others traditionally serve ten or thirteen fish dishes each Christmas Eve. It is thought that the seven fishes represent the seven sacraments of the Catholic Church, while others celebrate the Stations of the Cross. Thirteen dishes are said to represent the twelve apostles plus Jesus. Whatever your beliefs are, plan a wonderful seafood feast this year, gather round your friends and family and enjoy the season. Here is my suggestions for seven seafood dishes for your Italian Christmas Eve menu. Add a few vegetable side dishes, and a tasty dessert, and enjoy!
